Sultana Slice

Most kids have a sweet tooth, so here is a great slice giving them the sweet rush they love without the sugar overload. The combination of the icing and lemon in this healthy slice provides a sweet tang. Too many sweet products packed into school lunches make kids tired and lethargic. This then affects their ability to concentrate for the rest of the day.

Help your kids have the most productive learning ability possible by providing them a healthy nutritious lunch, while pleasing their young sweet palate.

Ingredients

2 cups plain flour
1/2 cup sugar
175 g soft butter
1 teaspoon lemon rind (grated)
2 teaspoons baking powder
1 tablespoon golden syrup
1/2 cup sultanas

Frosting
2 tablespoons lemon juice
1 cup icing sugar

Lets Get Baking!

Preheat oven to 350°F (180°C).
Grease a 8 inch (20 cm) shallow rectangular tin.
Melt the butter in a large saucepan add sugar and golden syrup stir well until all ingredients are combined.
Remove from heat add sultanas and lemon rind, stir.
Add flour and baking powder, mix well.
Spread evenly into tin.
Bake for 30 minutes until golden brown.
Cool on a wire rack.

Mix together icing and lemon juice until smooth then spread over slice while still warm.
Allow to cool then slice in the tin.

We are always trying to find things kids will eat in their lunch bags so great to find more ideas especially when simple, healthy AND the kids eat it…
