Strawberrry and Oats Muffins


Healthy strawberry muffins that are just delicious. Everyone loves strawberries and with the harvest season so short we need to find other ways of getting the enjoyment out of strawberries. With this strawberry muffin recipe you can have strawberry muffins all year round. Strawberries are a wonderful healthy berry that funny enough are not even from the berry family but from the rose family. The fruits are actually the tiny little yellow seeds on the outside of the fruit. Strawberries provide a wonderful moist texture to muffins.

Enjoy these quick and easy muffins that have great vitamin C from the strawberries and good dietary fibre from the rolled oats and also the strawberries. This recipe makes 12.

Ingredients

1 cup rolled oats
1 cup of self raising / all purpose flour
3/4 cup of brown sugar
1/2 tsp baking powder
1 tsp salt
1 egg
1/4 vegetable oil
1 cup milk
1 drained can of strawberries

Lets Get Baking!

Preheat oven to 375°F (190°C) and line a muffin tray with muffin papers.

Combine all ingredients in a mixing bowl. Stir well until blended thoroughly.

Spoon mixture into your muffin papers until about 2/3 full.

Bake for 17 – 19 minutes, or until you can slide a skewer in the centre and it comes out clean. They will be golden brown.

Allow to stand for 10 minutes before serving.

wow I didn’t know that strawberries were from the rose family, what a great recipe. I can’t wait to try it.
