This easy salmon patties recipe is a healthy lunch idea. Also known as salmon rissoles and salmon cakes this is a canned salmon recipe that is quick to make. You can then put between 2 slices of bread to create a healthy school lunch for kids.

Creating a lunch that is tasting and yet provides a good amount of nutrition for kids is never an easy task. Fish is extremely important in our diets and especially children. Studies have been done that confirm if you don’t feed your children different forms of fish while they are young, they are less likely to eat it as an adult.

Eating fish twice a week is very beneficial to young bodies as it is rich in omega-3 fatty acids, which are good for brain and nerve development and help reduce the risk of cardiovascular disease. As a bonus this recipe is low in fat and calories.

Ingredients

1 can pink salmon
2 medium sized potato’s boiled and mashed
1 small onion

It is hard to get kids to eat fish. So let’s hope they like these salmon patties. Thanks Cathy
