Cucumber Sandwiches

To celebrate the Queens Birthday weekend and especially this year in celebrating the Queens Diamond Jubilee, I wanted to create an afternoon tea British style. The 2 main things that came to mind were light scones with jam and cream and then of course the cucumber sandwich. So I made my family an English Tea which we had a 4pm. It is generally severed between 3 – 5 pm.

Scones are something my family eat all the time, but cucumber sandwiches are not something my kids have ever tried. My children tried the crunchy cheesy sandwich and to their surprise they enjoyed them. I did take on a more modern approach by using cream cheese in place of half the butter. They were very tasty, I will certainly make them more often. A good reminder to try new things.

Ingredients

4 slices of fresh white bread
4 slices of fresh brown bread
3 tablespoons of butter
3 tablespoons of cream cheese
1 large cucumber (peel if you wish, I did not)

Lets Get Preparing!

Cut the cucumber into thin slices.

Cut the crusts of all the bread then butter one side and cream cheese the other.

Gently place the cucumber slices on the cream cheese then the butter slice on the top.

Cut in half and serve by alternating the white and brown sandwiches.

Thanks for a great recipe. My children love cucumber I didn’t think about sandwiches.
