Coconut Cookies

Coconut Cookies

All kids love cookies and these are no exception. We have kids friends requesting these cookies when they come to visit. The hard task for these is to save some for lunches. Straight out of the oven they are yummy and we have found that these cookies work well in the freezer. This came about while trying to save some for lunch – they had to be hidden in the freezer.

These cookies are a good healthy alternative to packaged cookies. They take no time to make, then store in the freezer individually wrapped. This also prevents the kids from eating to many at once. Frozen cookies are a bit hard to eat. Put in the lunch box frozen in the morning and they will be just right by snack time.


Ingredients

2 cups self-raising flour
3/4 cup sugar
125 g soft butter
1 egg
1 teaspoon vanilla essence
1 cup of coconut
1/2 cup of extra coconut

Lets Get Baking!

Preheat oven to 350°F (180°C).
Grease a baking tray.
Cream butter and sugar in a large mixing bowl.
Add vanilla and egg, mix well.
Add cup of coconut and flour to the creamed mixture, mix well with a wooden spoon.
Roll heaped teaspoonful of mixture into balls. Keep the amount of mixture equal between balls.
Toss each ball into the extra coconut.
Place 2 inches (5 cm) apart on the tray.
Bake for 15 minutes until golden brown.
Cool on a wire rack.

Hey this is great. Everyone is always telling us to give our kids healthy lunches, but this site makes it simple and easy to put it into practice. Love it!!!!!
