Chicken & Cous Cous Salad

This great healthy salad is easy and quick to eat and is a favorite on those warmer days. I tend to make this as a larger meal for dinner on those busy days, as it can sit in the fridge until we come home from after school activities.

The kids will be happy to take it the next day for lunch. Remember to pack it with an ice brick to keep it nice and cold, also remember to pack a fork. As a tip you can pack it on a frozen fruit popper instead of the ice brick.

Ingredients

1 tablespoon olive oil
1 red pepper (capsicum), chopped
1 small zucchini, chopped
1 small onion
1/4 clove garlic
2 chicken breasts
1 cup chicken stock
100g couscous
1 large tomato, chopped

Lets Get Cooking!

Fry onion and garlic in a pan, until onion is golden brown.
Add cut up chicken pieces, capsicum and zucchini, fry until chicken is cooked.
Add stock and warm through.
Remove from heat and add couscous.
Allow the couscous to absorb all the water.
Then remove from pan into a container.
When cooled add the chopped tomato.
Divide into lunch containers and refrigerate.
