Beautiful Banana Cake

A quick and easy to make recipe for an old time favorite – banana cake. This packs well and can be stored wrapped in the freezer for those emergency mornings where time has slipped you by.

This recipe is light on ingredients, only the things you’re most likely to keep in the pantry and the refrigerator. With only 30 minutes needed for baking, you should be able to get this done in 45 minutes (with no kids)! Clean up may stretch you out to an hour!


Ingredients

60g butter
1/2 cup caster sugar
1 egg
1 teaspoon imitation vanilla essence
1 cup self-raising flour
1/4 cup milk
1 ripe banana (mashed)

Lets Get Baking!

Preheat oven on to 350°F (180°C).
Grease a loaf pan. Dust all over the inside with a little flour.
Melt butter and set aside.
Beat sugar, egg, vanilla and add butter.
Sift in flour, add milk and mashed banana.
Stir well with a wooden spoon.
Spread evenly in loaf pan and bake for 30 minutes until golden brown.
Cool on a wire rake.

These recipes are great for the kids lunch boxes. I am sure they will also do well with my morning teas with the Mums as well. Can’t wait to see what is coming up.
