Pikelets for healthy kids snacks
These banana pikelets are a good source of fruit and calcium for your children’s school snacks.
They are so cheap to make and quick to whip up. You can double up by making an extra batch, having some for a fun Sunday breakfast then sandwich them together with a small amount of butter and wrap them ready for the lunch box.
Ingredients
1 cup self raising flour
1 tablespoon of sugar
3/4 cup milk
1 egg
20g butter
1 banana (mashed)
1 tablespoon golden syrup
Lets Get Cooking!
Sift flour in a mixing bowl, add sugar and make a well in the centre. Add egg, golden syrup and milk then mix well. Put in mashed banana. Stir well with a wooden spoon.
Heat a large non-stick pan to medium heat. Drop on tablespoons full of mixture into the pan. Leave them enough room to spread. Cook for about 1 minute or until bubbles appear then flip them over. Give them no longer than 30 seconds on the second side. Cool on a wire rake.
When cool, butter 2 pikelets together then wrap and freeze in 2 pairs.

Hi Denise, good for you helping families that is lovely. Do you know I have never counted as with all my children and I am also guilty that we taste test as we go. I will make these for you today and get back to you in a few hours. My children will be very greatful, they have already had little chocolate cup cakes today so 2 snack treats in a day is a real novelty. Sorry for the delay in response. Hi Denise, I have just made a batch of Banana & Golden Syrup Pikelets without letting anybody taste test
. I am happy to say that you get 18 good sized pikelets. Each of my pikelets is approx 2 tablespoons of mixture. I hope this helps you. Cheers Cathy
Hi Cathy, I’m going to try making these and hopefully the kids (a 4- and a 1-year old) will enjoy them, I know I will! Do you use the 20g of butter to fry them in, or is the butter for sandwiching them together when they are cool? I’ve always fried plain pikelets in butter, but would try it without if it makes it healthier.
Hi Amber, I put 20grams of butter into the batter then I cook in a non stick pan. Depending on your fry pan you may need a little butter. You could then leave the butter out of the batter and put it in the fry pan. Good luck and I hope you kids enjoy them.
