Apple Cake

Everyone enjoys a nice moist cake. Well this apple cake recipe is set to please even your fussiest cake eaters. It has the sweetness of normal cakes yet this healthy cake has no frosting, just a dusting of cinnamon. The apples make the cake moist.

Apples are a great source of vitamin C. So this apple cake recipe has 3 apples in the apple cake giving each slice a good amount vitamin C which contributes to healthy bones, teeth and gums. This apple cake is also Low Gi meaning it releases it’s energy slowly.

You can make this cake for either a healthy kids snack or a lovely afternoon tea for play dates pleasing all the kids and parents too.


Ingredients

125g unsalted butter
2/3 cup caster sugar
2 eggs
2 tablespoons cream
1 cup self-raising flour
2 small green apples
½ teaspoon cinnamon
1 teaspoon caster sugar, extra

Lets Get Baking!

Preheat oven to 350°F (180°C) and line a 20 cm round tin.

Core and peel apples, chop into pieces then stew until soft.

Beat butter and sugar to a cream and add one egg at a time, mixing well. Then add in flour and cream and blend it through.

Stir in grated stewed apples, then pour mixture into your cake tin.

Bake for 35 – 40 minutes, or until a skewer comes out clean.

Once out of the oven, combine the cinnamon and extra caster sugar and sprinkle on top. Allow to stand for 5 minutes to cool. Enjoy for a healthy school snack or after school snack.

This Apple Cake sounds fantastic going to make it for the family. I might even make two and have one apple cake for dessert with cream and one for lunches.

This sounds delicious & so easy. I’ll make it tomorrow to send with my 10 year old on a sleep-over at a friend’s house. Healthier and yummier than the usual lollies! Thanks
