Butterscotch Muffins


An advantage of cooking butterscotch muffins is that the house smells so yummy. We are still in Canada and it has been snowing outside all night. The kids have been building a snowman and tobogganing. They always builds up an appetite burning energy in the snow. We often make hot chocolates when they come in but today I have decided on trying butterscotch muffins with maple syrup and making them a drink of warm milk.

Being from Australia we just love the novelty of the snow and the cold. So we did enjoy these muffins warm and they were very nice. Lucky there was a few left over that I am sure the kids will enjoy just as much tomorrow.

Maple Syrup and Brown Sugar Pikelets


While on holidays in Canada we found the yummiest maple syrup. It inspired me to add it to these delicious pikelets. The kids loved them. The brown sugar and maple syrup gave them a sweet taste. The first batch only lasted 10 minutes or maybe less. As they were coming out of the pan everyone needed to taste test.

I think these would make a great morning or afternoon tea to pack for school. With so much flavour in the pikelets themselves you don’t need to add a jam or another topping. You can just wrap and pack. They will freeze well.

Pumpkin and Spinach Salad

Pumpkin and Spinach Salad

This salad is incredibly tasty. The yummy soft roasted pumpkin with the crunchy apple slices go so well together and is really easy to eat. Just pack a container with a fork and hope they don’t lick the container clean. Depending on your children you may want to take out the red onions.

This salad looks fantastic yet it is an easy one. I buy the pre washed spinach and a bottle of raspberry salad dressing. I also roast the pumpkin the night before while I am cooking the evening meal, then allow it to cool and put it in the fridge ready for the morning. In a matter of a minute you can put it all into a container and in the lunch box.

Big Bear Cookies

Big Bear Cookies

During a recent trip to Big Bear California, the kids and I decided to bake some, Big Bear Cookies. Coming from Australia, the only bears we see are Koala bears. American grizzlies and brown bears are really big. Hence the Big Bear. We visited to zoo to learn that bears really do like honey, it was lots of fun.

Most of the homes at Big Bear are known as Cabins and have some form of wooden carved bears out the front. The place is very relaxing and the people are extremely friendly. We had a wonderful time and will remember it when we make these cookies again. Read the full article →
