Chocolate Chip and Oats Cookies

Chocolate Chip and Oats Cookies

Here is a fantastic chocolate chip cookie recipe that gives your kids a slow release of engery to take your children from school lunch into the afternoon. This helps them to learn later into the day. Rolled oats and oat bran recipes are a healthy alternative to the standard cookie recipe. The goodness of rolled oats and oat bran provide a great source of fibre and complex carbohydrates. Adding the chocolate chips provides a lovely taste with the oats.

This oat recipe has been tested many times on my children and extended family, after many alterations to make them light and fluffy without being buttery like a standard oat cookie. I am pleased to say this healthy oat recipe is a winner in my family. I hope it is enjoyed by your family, and I look forward to sharing fruit versions of this cookie in the future.

ANZAC Cookie

ANZAC Cookies

ANZAC Day is a special day for all Australians and New Zealanders. ANZAC stands for Australia, New Zealand Army Corps. Today and every April 25th both countries stop to remember all past and present. On April 25th 1915 the ANZAC’s landed on Gallipoli Peninsula, although we had a great number of casualties and deaths over 8 long months, our ANZAC’s held strong. Creating what we know today as the ‘ANZAC Spirit’.

ANZAC Day is celebrated now with Dawn Services and Parades all over Australia and New Zealand. Prayers will be said, stories will be shared and tears will gently roll down some faces. This is a day held in the hearts off all my family as we are forever grateful for the strength of my Grandfather and Great Uncles who all fought in the War.

The ANZAC Cookies (Biscuits) came about by the women back home baking these long lasting cookies that could handle the overseas travel and get to the Defence Personnel, providing them a treat from home. So on this day the smells of these yummy ANZAC cookies will be smelt from most homes and stores. Each year we make these cookies and take the opportunity to explain some history to our children.
